Simple, fast and delicious: Use the recipe for quiche Lorraine, only you’ll replace the bacon with your salmon leftovers from Christmas or New Year’s eve (smoked, raw or candied). Add a little dill, and voila! To ensure the salmon isn’t overcooked and dry, I cut it into pieces that I freeze before adding them to the mix. It will take it a little longer to catch-up with the eggs :0)IMG_3261

I made something very similar for New Year’s Day. Beaten eggs, smoked salmon, capers, caramelized shallots and a light cream cheese. Baked altogether.
